The New Stuff

Thanksgiving Stuffings from A Thyme to Cook & Coventry Farmer's Market Vendors.

We showcased these two dishes on NBC Connecticut yesterday as part of our Thanksgiving segment.  A huge thank you to A Thyme to Cook and their chief for creating these for us and for sharing the recipes.  The bonus was that they used as many Coventry Farmer Market Vendors as they could.  Local and FRESH!!!  Enjoy!  


Corn Bread, Ladies of Lebanon Kielbasa and Fennel Stuffed Acorn Squash

3 cups toasted corn bread
3 cups Ladies of Lebanon fresh Kielbasa cooked and medium diced
½ c cup small diced fennel
¼ cup small diced onion
¼ cup small diced orange or red pepper
¼ cup good olive oil
1 teaspoon fresh chopped sage
3 tablespoons fresh chopped parsley
½ teaspoon fennel seeds toasted and crushed
½ cup vegetable or chicken stock
4 medium acorn squash cut in half, de seeded and partially steamed
Salt and pepper to taste

In a medium sauté pan set on medium high add olive oil. Once oil is hot add the fennel, onion and pepper. Cook until the onion is translucent and the fennel is tender.
  1. In a large mixing bowl add the cornbread, cooked Ladies of Lebanon kielbasa, sautéed vegetables, fresh chopped herbs and spices and stock. Season with salt and pepper to taste.
  2. Mix until well combined but not pasty.
  3. Fill the acorn squash half with a mound of stuffing.
  4. Fill the bottom of a roasting pan ¼ in full of water.
  5. Bake at 325F covered with a lid or tin foil for 25 min.
  6. Uncover the squash and bake for an additional 10 min or until the stuffing is crispy on the top and the squash is tender
  7. Garnish with more fresh chopped herbs serve and enjoy.




Indonesian Rice, Beltane Farm Fresh Chevre stuffed delicatta squash with roasted apples and beets
This recipe is vegetarian and gluten free. Delicatta squash is tender and the skin is edible.

3 Cups cooked Indonesian rice or other rice of your choosing
4 ounces Beltane Farm Fresh Chevre
1 cup small diced leeks
1 medium roasted red beet small diced
2 Winesap apples roasted and small diced
¼ cup good olive oil
1 tablespoon fresh chopped thyme
1 egg 
4 delicatta squash  cut on the bias and de seeded
Salt and pepper to taste

  1. In a medium sauté pan set on medium high add olive oil. Once the oil is hot add leeks. Cook until soft .
  2. In a large mixing bowl add rice, sautéed leeks, thyme and the egg. Mix until well incorporated. Season with salt and pepper.
  3. Gently fold in the apples and beets.
  4. Using your hands break apart pieces (about the size of your pinky nail) the Beltane Farm Fresh Chevre and gently fold into the rice mixture.
  5. Fill the delicatta squash with a mound of stuffing.
  6. Fill the bottom of a roasting pan ¼ in full of water.
  7. Bake at 325F covered with a lid or tin foil for 25 min.
  8. Uncover the squash and bake for an additional 10 min or until the stuffing is crispy on the top and the squash is tender
  9. Garnish with more fresh chopped herbs serve and enjoy.
